Anyone use any type of product such as this. The hydrophobic spray coating. Looks like it would be awesome for no water spots! There has to be a down side though...???

I did a fair amount of R&D with my previous company to create some hydrophobic / olephobic products and UV wrecked anything we had tried... with that ours had to breathe and not seal, which might make all the difference. Not sure the base formula they're using but in my experience everything worked great until the sun got a hold of it.

There are a ton of these on the market. Opticoat, Cquartz, Modesta are popular ones often installed by professionals. Opticoat and Gyeon have a comsumer line you can apply yourself. There are many other brands too. They are nice but there are some downsides. Some people love the look some people do not. If you don't treat the coating well, it will get little swirls and scratches in it. It is a very hard semi-permanent coating which must be professionally removed (buffed out) if you don't like it or get too many swirl marks in it. A normal porter cable or other random orbital will not remove it. I tried Modesta on one of my cars. I have not fully formed an opinion yet. Not sure how it would work on gel coat.
